Aqua Blue

Sunday night I dined at Aqua Blue: a Roswell restaurant featuring “global cuisine.” And while Aqua Blue is known for its (amazing) sushi, its menu is quite diverse. Aqua Blue has been referred to as the “hidden gem of Roswell,” and after one meal there, I absolutely agree!

From the moment I sat down at my table, I knew Aqua Blue was no ordinary sushi restaurant. I ordered my bottle of wine- 1/2 off bottles of wine on Sundays!- and my waitress brought over some homemade bread. Yum.

I don’t know about you.. but for me, there’s nothing better than fresh sashimi. So that’s what I decided to order first! The sashimi appetizer came with yellowtail, tuna and salmon shaped like roses! And I promise it was as delicious as it was pretty.

Next it was time for some sushi rolls. I decided to go with the “AB” Volcano (baked spicy scallops, avocado, crab, asparagus, cucumber, spicy chili sauce and Japanese mayo) and the appropriately named Oh My God (tuna, salmon, yellowtail, cream cheese, crispy rice and chili sauce). Oh my god was right.

After doing some damage on the sushi, I figured it was time to try one of Aqua Blue’s main plates. I personally am a huge sushi fan, but I was so impressed by Aqua Blue’s other menu items, too! They serve everything from tilapia to lobster to steak to duck to lamb and more! Definitely no shortage of options. After a huge debate over what to order, I went with the Prosciutto Wrapped Grilled Shrimp, served with mushrooms, edamame and a vodka lobster sauce. De-li-cious.

And as if the bread, sashimi, sushi rolls and shrimp were not enough… I ended my meal with crème brulee that was torched to perfection.

Clearly, the food was incredible (is your mouth watering yet?), but what made this experience so memorable was the staff. They were all extremely attentive and helpful. So between the service and the food, Aqua Blue gets an A+ in my book. Definitely the “hidden gem of Roswell.” Plus, for all you ITPers, it’s right off 400, making it very easy to get to!
